Delicious and Easy Mac and Cheese Bite Appetizers

Hi everyone! Well it’s football season and that means parties, get togethers, tailgating and more. Tailgating and football parties are a bit more casual than other parties so I try and be a bit more daring and make new dishes that I think will be a big hit. I tried these mac and cheese bites recently and they are SO AMAZING! Everyone loved them and the presentation was so cute. Even more exciting, the kids ate them all up. Who doesn’t love a mac and cheese bite? Lets get started:
Easy Mac and Cheese Appetizer Bites
Ingredients:
1/2 lb elbow macaroni
1 1/2 tablespoon unsalted butter
2 tablespoons unbleached all-pupose flour
1 cup whole milk
4 oz aged white cheddar cheese, grated
4 oz Gruyère, grated
2 extra large egg yolks
1/4 cup freshly grated Parmigiano-Reggiano Cheese
1/4 cup Panko crumbs
pinch of Kosher salt
- Preheat oven to 425 F
- Spray 2 mini muffin tin baking pans with cooking spray and set aside
- Boil and cook pasta as directed on the box and set aside
- Combine the panko bread crumbs and parmesan cheese and set aside
- In a large sauce pan melt butter on medium heat
- Whisk in flour constantly for 2 minutes
- Add milk and continue to whisk for 5 minutes until thickened
- Add the cheeses and whisk until melted (note you can add any types of cheeses you like)
- Remove from the heat and whisk in eggs yolks
- Fold in the macaroni noodles and season with salt as needed ( I like to add a pinch of nutmeg for a fun unique flavor)
- Evenly fill the muffin tins 3/4 full with macaroni mixture
- Sprinkle the tops evenly with bread crumb/cheese mixture
- Place in oven and bake for 10 to 12 minutes
- Remove from the oven and let cool for 5 minutes
- Serve and enjoy:)
