Worth the Effort, Homemade Potato Salad Recipe

Hi Everyone!  My son Luke just recently turned one, and for his birthday we celebrated with a festive Sunday Brunch at our house.  We had about 60 people at our home and it ended up being a great success.  I have to admit, I really love hosting parties.  My sisters think I may have a small obsession but brunch happens to be my favorite! I feel like brunch is the easiest to host and tends to have a more laid back vibe.  To make it simple, all you need to do is purchase pre-made deli meat platters, bagels, muffins, and salads. Make a nice display for your guests and everyone will think you spent hours preparing all this food!  No matter what, the one thing I love to make for all my parties is my homemade potato salad.  I know it’s easy and convenient to grab those pre-made ones at the grocery store, but I promise this recipe is definitely worth the extra effort and is guaranteed to be a huge hit with your guests. Here’s how it goes:

Ingredients:

  • 2 pounds of quartered red-skinned potatoes
  • Salt
  • Pepper
  • 2 tablespoons of apple cider vinegar
  • 10 ounces of frozen peas
  • 3/4 cup of mayonnaise
  • 3/4 cup of sour cream
  • Dill

Add the potatoes to a pot with salted water and bring to a boil.  Make sure to salt your water. This is the only way to actually flavor the potatoes.  (The same tip applies for pasta as well.)  Simmer the potatoes until tender and transfer to a bowl.  Sprinkle the potatoes with additional salt, add 2 tablespoons of apple cider vinegar and set aside. Boil 10 ounces of frozen peas in the same pot until just tender (about 3 to 4 minutes). Drain, rinse and add to the potatoes. Whisk 3/4 cup each mayonnaise and sour cream, and the dill in a separate bowl. Toss with the potatoes and peas and season with salt and pepper.

This homemade potato salad is beyond delicious and will be a great addition to your parties.  It is nice to have something yummy and home cooked, especially when hosting a party with a lot of pre-made foods.  Hopefully you enjoy this recipe as much as we do!
