The Most Amazing and Easiest Shrimp Scampi!

Hi Everyone!  I am so excited to share this recipe with my readers.  It is amazing and so easy! I promise it will not disappoint.  I have been making this shrimp scampi ever since veterinary school (it actually won a best recipe award)!  I make it all the time for weeknight meals and for entertaining.  Here’s how it goes:

1 package of Vigo Yellow Rice

3/4 cup of white wine (always cook with a wine that you would also drink)

3 1/2 pounds of shrimp

2 lemons

6 to 8 garlic cloves

1 stick of butter

Italian parsley

Cook Vigo yellow rice as directed on the package (this brand of yellow rice is key in the recipe- it is amazing and always comes out perfect).

Melt 1/2 stick of butter in saute pan on medium heat.

Saute the garlic until fragrant (about 1 to 2 minutes) on medium heat (do not burn the garlic- it will give the garlic a very bitter flavor).

Add the shrimp to the pan and saute until pink.

Squeeze one lemon over the shrimp and garlic.

Remove shrimp and set aside.

Poor 3/4 of a cup white wine in the saute pan and cook off wine on medium high heat until half the wine is cooked off (about 4 minutes).

Place the saute pan off the heat.

Add 1/2 stick of butter.

Add parsley.

Now it is time to plate (the fun part).

Place the yellow rice down on your serving platter.

Add the shrimp.

Poor the delicious sauce all over the rice and shrimp.

Squeeze a lemon on top.

Serve with slices of lemon.
